PELLEGRINO (ペレグリーノ) is not just a meal but a piece of culinary theatre. With only six counter seats, this intimate restaurant in Ebisu presents a unique, two-act omakase experience orchestrated by a single chef. The format is intensely personal and staged, making it one of Tokyo's most sought-after reservations for Italian cuisine.

The first act focuses on meticulously prepared, ingredient-forward dishes. Guests consistently praise the profound, long-reduced brodo made from 'Gitaro shamo' chicken, the exquisite handmade pastas like tagliolini and tagliatelle, and the perfectly cooked Yazawa beef fillet. The accompanying wine pairings are noted for their generosity and quality.

The second act is the restaurant's signature: a ritual dedicated to cured meats. The chef uses a vintage manual slicer to shave paper-thin slices of prosciutto, mortadella, and Jamón Ibérico, each served at a precise temperature. This presentation is often described by reviewers as a revelation, with some slices served directly onto the guest's hand to be tasted at the perfect moment.

  • Seating: There are only six counter seats. The restaurant cannot be booked for private use.
  • Service: Expect a long, theatrical service lasting 3.5 to 4 hours, with an intermission between the two main parts of the meal.
  • Payment: Credit cards (Visa, Master, JCB, Amex, Diners) are accepted. Electronic money and QR code payments are not. A 10% service charge is added to the bill.
