WASA (わさ) is not just a meal but a performance. At a sleek counter seating just six to eight guests in Higashi, Shibuya, Chef Yamashita delivers a tightly paced omakase menu that re-examines familiar Chinese dishes with an obsessive focus on temperature and texture. The experience is theatrical, with each course prepared and plated before your eyes, showcasing a level of control that reviewers consistently describe as meticulous.
The menu is a succession of hits that have earned the restaurant a devoted following. Diners almost universally praise the signature warm caviar with cold rice noodles (biifun), a study in contrasting temperatures and textures. Other standout dishes include a gyoza filled with scallop, uni, and butter; a trio of grilled and filled gyoza featuring premium Kinka and Meishan pork; and a show-stopping shark fin (fukahire) served in a two-stage white broth (paitan) that begins with pork and is finished with chicken. The meal often concludes with a two-stage fried rice, a final bowl of tantanmen, and a delicate, melt-in-your-mouth almond tofu (annin dofu).
While praise is overwhelming, a few minor points recur. Some guests find the seasoning profile to be a "Japanized" or milder take on Chinese cuisine than they expected. A handful of reports mention that the wine pairings didn't always hit the mark. The high price point is also noted, though most feel it's justified. It's worth noting that while extremely rare, there have been isolated complaints about service issues, but these are exceptions in a sea of positive feedback.
The experience is priced as a special-occasion destination. Reviewers in 2024–2026 reported the omakase course at approximately ¥49,500, with a separate 10% service charge. With wine or other drink pairings often adding ¥25,000–¥33,000, a final bill around ¥60,000 per person is common, with some totals reaching as high as ¥87,000. Despite the cost, guests consistently call WASA excellent value for the level of artistry and quality of ingredients.
