Made entirely in-house, these high-hydration, irregularly waved strands have a distinctive chewy, springy quality that locals call 'piro-churu' texture. They are the perfect vehicle for the restaurant's other masterwork: a multi-layered clear broth built from 煮干し (dried sardines), kelp, and poultry. The combination of these noodles with deeply seasoned chashu pork is the shop's signature.
