The sushi rice, or shari, is deliberately sharp and vinegary, served in small portions designed to cut through and highlight the richness of the excellent tuna that follows.
The omakase menu builds from this powerful opening into a series of refined small plates (otsumami) before the main nigiri sequence. Guests consistently praise the quality of these dishes, which include tender steamed abalone, delicate white-fish preparations, and crunchy grilled unagi (freshwater eel). - Getting There: The restaurant is on the ground floor of the ARISTO Minami-Aoyama building. It's a 4-minute walk from Gaiemmae Station (Tokyo Metro Ginza Line) or a 5-minute walk from Aoyama-itchome Station (Ginza and Hanzomon Lines).
- Reservations: Bookings are essential and are made online via the OMAKASE platform. The restaurant does not accept reservations by phone. Punctuality is requested as service is paced for each seating time.
- Seating: The space is intimate, with a 10-seat main counter and a 5-seat sub-counter. Private rooms for 4 or 6 people are also available.
- Payment: Major credit cards (VISA, Master, JCB, AMEX, Diners) are accepted. Electronic money and QR code payments are not.
