Sushisho Saito (すし匠 齋藤) elevates the traditional sushi experience into a long-form performance. The format is a signature extended omakase, where a succession of 25 to 40 small courses alternates between cooked appetisers (tsumami) and individual nigiri. This allows for a huge variety of textures and temperatures, with chefs calibrating the rice and seasoning for each specific piece of fish. The kitchen is known for surprising pairings, such as flounder (hirame) with jalapeño or mackerel (saba) with pepper fruit.

Guests consistently praise the technical polish and creativity. Reviewers highlight the exceptional quality of ingredients like sea urchin (uni) and abalone. Several signature dishes are repeatedly named as standouts: an overflowing king crab (kegani) hand-roll, a savoury egg custard with salmon roe (sujiko chawanmushi), salt-cured horse mackerel (aji), and a sweet pounded-rice finale called 'ohagi'. Many international visitors also note the warm, lively atmosphere at the counter and appreciate the thoughtful sake recommendations.

The main drawbacks are practical. The experience comes at a high price, and booking a seat is extremely difficult. Some diners found the seasoning on certain dishes to be quite bold or salty. As is common in such exclusive restaurants, regular customers may be seated in front of the head chef, while first-time visitors are served by other highly skilled chefs at the counter.

The set omakase course costs around ¥60,000 per person, according to recent reviews. Because the nigiri are deliberately small, many guests order additional pieces; with extra sushi and drinks, final bills often reached approximately ¥68,000 per person. For sushi obsessives and special-occasion diners, the quality, creativity, and sheer number of courses represent outstanding value. It is not, however, a good choice for a casual or budget-conscious meal.

  • Getting There: The restaurant is a 3-minute walk from Akasaka Mitsuke Station, accessible via the Tokyo Metro Ginza and Marunouchi lines. It is on the 2nd floor of the Akasaka DN Plaza Building.
  • Reservations: Bookings are essential and notoriously difficult to secure. Plan far in advance or inquire about same-day cancellations.
  • Seating: The main counter has 11 seats. Private rooms for 4-6 people and a separate private annex ('hanare') are also available.
  • Payment: Major credit cards (VISA, JCB, AMEX, Diners) and some QR code payments (d Barai) are accepted. Electronic money is not.
  • Children: Children are welcome on Saturdays and Sundays only. They are not permitted from Tuesday to Friday.
  • Smoking: The restaurant is non-smoking. A designated smoking area is provided outside.
  • Parking: No dedicated parking is available, but there is a paid public car park next to the building.
