At Sushi Mizukami (鮨 みずかみ), chef Mizukami continues the legacy of his training at the world-renowned Sukiyabashi Jiro. The focus is on a traditional Edomae style, defined by a punchy, rice-vinegar shari (sushi rice) that is precisely adjusted in temperature and size for each piece of fish. The intimate, eight-seat counter is run by two dedicated chefs who demonstrate exacting techniques, from cooking mantis shrimp (shako) in its shell to searing bonito over straw and charcoal.

Guests consistently praise the distinctively vinegary rice and its excellent balance with fatty cuts of fish. Nigiri that are repeatedly named as standouts include sardine (iwashi), gizzard shad (kohada), Japanese tiger prawn (kuruma ebi), sea urchin (uni), and conger eel (anago). The calm, focused service and English explanations from the staff are also appreciated, with some diners noting the chef occasionally offers an extra piece or a small gift.

However, some non-Japanese visitors have reported a different experience. A recurring complaint is being seated with the assistant chef and receiving a faster-paced meal with fewer courses than expected. A minority of diners also find the signature shari too acidic for their taste.
