At nacol, an eight-seat counter in Asakusa, the star is cured ham. Chef Kenta Yokoyama builds an entire Italian omakase around rare, long-aged prosciutto (from 30 to over 60 months), which he shaves paper-thin on custom slicers. The result is a texture so delicate the fat melts on contact, a signature that defines the experience.

Guests consistently praise this focus. The opening sequence of hams, including varieties like 30-month Auvergne and 60-month Iberico, is the main event. Signature dishes that reappear on guests' highlight reels are the brioche with fermented butter topped with just-cut ham, and a simple but profound dish of hot rice crowned with prosciutto. Later courses include well-executed pastas, such as those with bottarga or squid ink, and wood-grilled mains like Tokyo beef or saddleback pork. The pistachio gelato is also a frequent favorite, as are the well-chosen wine pairings curated by the chef.

While the ham courses are universally lauded, a few reviewers find the later pasta and main dishes slightly less striking in comparison. The wine pairings, though excellent, can add significantly to the final bill, and some have noted the pacing can feel rapid.
