Mitaka (味享) is a direct inheritor of the culinary philosophy of the legendary Kyoaji, one of Japan's most revered traditional restaurants. The experience is built around an omakase tasting menu that showcases obsessive seasonality, precise technique, and a quietly powerful dashi that forms the backbone of many dishes. The meal unfolds as a sequence of small, perfectly judged plates that build toward a unique and celebrated finale.

Guests consistently praise the kitchen's stock work and the quality of its ingredients. Dishes that draw frequent acclaim include 芋茎の吉野煮 (imobou no yoshinoni), a comparison of two types of sea urchin in the 雲丹茄子田楽 (uni nasu dengaku), and seasonal specialities like 渡り蟹の真薯 (watarigani no shinjo) and winter crabs such as Matsuba or Kōbako. However, the most memorable part of the meal for many is the finale: a pair of rice courses, a 鮪の漬け丼 (maguro no zuke don) of marinated tuna followed by ハラスご飯 (harasu gohan), a rich salmon belly rice that reviewers often call unforgettable.

Practical considerations are significant. The restaurant is tiny, with only eight seats at a counter that some find cramped. Bookings are exceptionally difficult to secure, with seats often filled for the entire year. Service runs in two strict seatings, and punctuality is essential.
