Matsukawa is one of the most revered and difficult-to-book kaiseki restaurants in Japan. Access is by introduction only, making a seat here a rare opportunity to experience Chef Tadayoshi Matsukawa's singular vision. Formerly of the famed Shoufukurou in Kyoto, the chef is known for an almost uncanny ability to bring out the purest essence of each seasonal ingredient through precise temperature control and perfectly balanced dashi.

The omakase menu changes with the seasons, but guests consistently praise the exceptional quality of the produce, from Taiza snow crab and spiny lobster to black abalone. Signature dishes that appear in many reviews include the steamed crab rice (often served with Beluga caviar), flawless grilled items like bamboo shoots or matsutake mushrooms, and a final rice course, the 'Matsukawa-don', topped with salmon roe and cured mullet roe. The meal often concludes with a much-admired water-yokan dessert. The quiet, refined atmosphere, whether at the six-seat counter or in a private room, is also highly rated.

The main difficulty noted by reviewers is practical: gaining access. The restaurant is strictly by referral, and even then, bookings can be a year or more away. The experience is priced accordingly; reviewers report paying between ¥80,000 and ¥95,000 per person for dinner, with recent bills cited at ¥82,500 and ¥92,620 including drinks. Despite the cost, diners almost universally agree that the price is justified for a once-in-a-lifetime meal defined by technical perfection and superlative ingredients.
