Japanese Cuisine Yamazaki (日本料理 山崎) is the Tokyo evolution of a fêted three-star restaurant from Toyama, now bringing its refined craft to a quiet backstreet in Kyobashi. While dinner is a full kaiseki experience, the restaurant has earned a stellar reputation for its weekday lunch, which focuses on a single, masterfully prepared specialty: 煮鰻 (ni-unagi), or simmered eel.

Unlike the more common grilled preparation, the eel here is white-grilled, gently simmered in dashi, rested, and then finished with a glaze over charcoal. The result, which guests consistently describe as 'fuwafuwa' (fluffy or feathery), is an exceptionally soft, melt-in-the-mouth texture that retains a delicate, smoky finish. Reviewers rave about the balance of the eel with the perfectly cooked rice and tare sauce. Other praised dishes include the 鰻真丈と肝のお椀 (eel ball and liver soup). The humble, attentive hospitality from the owner and the serene, white-wood counter room are also frequently highlighted.

The unique preparation may not suit purists who prefer the firmer texture of heavily grilled unagi. A few diners also note that the restaurant's minimal signage on a narrow alley makes it difficult to find. Dinner is a significant investment, with reviewers citing spends of ¥30,000–¥39,999.
