Hasegawa Minoru (長谷川 稔) is one of Tokyo's most exclusive and difficult-to-book restaurants, offering a modern European omakase experience in an intimate, four-seat counter setting in Minamiazabu. The restaurant is celebrated for its chef's exceptional command of fire and temperature, a technique that elevates every ingredient to its peak potential.

Guests consistently praise the kitchen's precise cooking, which results in dishes with bold, balanced flavours and unforgettable textures. Signature plates that reviewers frequently mention include a cold pasta with shirako (cod milt), a venison cutlet from Ezo deer, and kinmedai (splendid alfonsino) served with perfectly crisped skin. Other highly rated courses feature uni (sea urchin) pasta, abalone risotto, and premium beef. The wine pairings are also widely considered excellent and a key part of the experience.

The main criticisms are not culinary but operational. Diners report extreme difficulty in securing a reservation, often booking months or even years in advance. The restaurant operates with a strict single-start time for all guests and has a harsh cancellation policy, with some reviewers noting fees as high as 50%. A few also felt the decor didn't quite match the high price point.

Reviewers typically report spending between ¥50,000 and ¥60,000 per person. For example, one noted a '薫 HIROO おまかせ' course at ¥36,300 plus a 10% service charge, while a couple's bill came to around ¥130,000. With wine pairings, the total can easily approach ¥70,000 per person. Despite the cost, most find the unique cooking and memorable dishes offer excellent value for a special occasion.

  • Reservations: Reservations are mandatory and can only be made through the OMAKASE website. Securing a seat is extremely difficult. Phone reservations are not accepted.
  • Getting There: The restaurant is a 3-minute walk from Hiroo Station.
  • Seating & Service: There are just 4 counter seats and a private room for 4 (a ¥10,000 fee applies). Service is a simultaneous single start for all guests, so punctuality is essential.
  • Payment: Major credit cards (VISA, Master, JCB, AMEX, Diners) are accepted. Electronic money and QR code payments are not. A 10% service charge is added to the bill.
  • Cancellation Policy: The restaurant's cancellation policy is reportedly very strict, with significant fees.
  • General: The entire restaurant is non-smoking. No parking is available.
