Furuta (フルタ) is one of Tokyo's most exclusive and sought-after dining experiences. At an intimate eight-seat counter in Ginza, Chef Hitoshi Furuta, formerly of the famed Kaikatei in Gifu, personally cooks for his guests. The cuisine is Chinese, but elevated with superlative ingredients and a technique that many reviewers describe as flawless. The experience is built around a multi-course tasting menu tailored to the best produce of the day.
Guests consistently praise the quality of the food. Signature dishes that appear repeatedly in reviews include a bold, generously textured shark-fin steak and a refreshing dish of cold rice vermicelli (biifun) topped with Beluga caviar. Other highly rated items are the large, crisp spring rolls with fillings like snow crab or sea urchin, fried dumplings with scallop and uni, and rich, complex soups. The meal concludes with an unusual offer: an 'all-you-can-eat' selection of up to ten different rice and noodle dishes to finish.
While the food receives near-universal acclaim, a minority of diners note some drawbacks. The price is exceptionally high, and some question the value. The service style can be divisive; some find it engaging, while others report a brusque or overly casual atmosphere, with staff cleaning in full view of guests. The counter seating is tight, and the meal is served at a brisk pace.
Expect to pay accordingly for the experience. Reviewers in 2024–2026 report set courses starting from ¥50,000–¥55,000, with common choices at ¥70,000–¥100,000 and bespoke menus over ¥150,000. Premium add-ons can be very expensive; a single scoop of caviar was quoted at around ¥20,000. Total bills seen in reviews include ¥93,000 for one person and ¥173,000 for two.
