Akasaka Shimabukuro (赤坂 島袋) is an intimate, eight-seat counter restaurant in Akasaka that focuses exclusively on a single omakase tasting menu. The experience is built around two pillars: exceptional, house-made soba noodles and a profoundly flavourful dashi broth. Guests sit front-row, watching the chef's precise movements as each course is prepared and finished.

The menu features two signature dishes that draw near-universal praise. The first is a rich bowl of karasumi soba, where thin noodles are tossed with cured mullet roe, botan ebi shrimp, and fragrant river and sea nori. The second is the hand-cut soba that appears twice during the meal, including a coarse, rustic ten-wari (100% buckwheat) version. The foundation for many dishes is a remarkable dashi, often noted by reviewers as being made from nine-year-aged Rishiri kombu and freshly shaved maguro katsuobushi. Other memorable seasonal plates include soft-shelled turtle (suppon) karaage and hand rolls with eel (unagi). Service is consistently described as warm and attentive, complemented by a well-curated sake list.

Serious criticism is very rare. A small minority of diners felt that one or two courses in the sequence didn't quite 'stand out' amidst the considerable hype, but these comments are outliers. Most guests report that the meal is worth the high price, citing the quality of the ingredients, the precise technique, and the satisfying flow of the courses. Many also appreciate the option to request a second helping of the soba or rice dishes.

Reviewers in 2024–2026 reported the omakase course was priced around ¥33,000–¥35,000. With drinks, some final bills were around ¥36,200, fitting the restaurant's typical dinner spend of ¥30,000–¥39,999.
