Aji Hiro (味ひろ) is a destination for serious diners seeking the direct lineage of Kyōaji, one of Japan's most revered kaiseki restaurants. Chef Tomohiro Gunji trained there for 17 years, and his philosophy of 'subtraction'—focusing on pure flavours rather than showy additions—is evident in every dish. The experience is intimate, served at a simple seven-seat counter in the quiet Irifune neighbourhood.

Guests consistently praise the seasonal precision and restraint. Spring menus feature bamboo shoots (筍) prepared in multiple ways, from slow-grilled yaki-takenoko to simmered variations. Other signature dishes that draw acclaim include the rich Rosanjin-gohan, the unique hadani (buttered clam in dashi and Worcestershire sauce), pufferfish milt (fugu no shirako), and a delicate, made-to-order warabi-mochi for dessert. The service, often led by a female okami, and the thoughtful sake pairings are also frequently highlighted.

Criticisms are almost entirely practical. Securing a reservation is extremely difficult, with waits often stretching for months.
