Kiyama (木山) is a temple to one of Japanese cuisine's foundational elements: dashi. The entire experience is built around the broth, which is prepared before your eyes at the counter. The chefs shave two types of aged bonito blocks and draw the primary ichiban dashi using soft water from the restaurant's own well. This ritual is a signature moment, setting the stage for a meal defined by clarity and depth of flavour.
Guests consistently praise the results, particularly in clear soups (owan), such as one featuring splendid alfonsino (kinmedai). The sashimi is noted for its flawless quality, and seasonal grilled dishes like sweetfish (ayu), crab, or bamboo shoots showcase precise cooking. The meal's generous finale is another highlight, where diners can choose from up to five different rice and noodle dishes. While the food receives near-universal acclaim, some reviewers note that the meal's pacing can be slow, often lasting three hours or more with long pauses between courses. A few foreign guests have also reported being seated in a separate room away from the main counter, which limits interaction with the chef. For a high-end Kyoto kaiseki experience, Kiyama is considered excellent value, especially for lunch. Reviewers in 2024–2026 reported lunch courses around ¥18,000. Dinner courses range from ¥27,500 to ¥39,000. One guest paid ¥27,500 for the meal with an ¥8,800 drink pairing and a 10% service charge, for a total of about ¥39,930. Expect final bills to approach ¥45,000 with pairings and other extras.
